Iranian caviar, the finest and most expensive in the world has been a part of Persian cuisine for thousands of years. In Iran, sturgeon fishing is still a traditional practice, and it is this unique Iranian ancestral fishing technique which makes Iranian caviar the best in the world. The Caspian Sea produces over 90% of the world’s caviar.
In the fishery, the sturgeons are cleaned with water. Then with the caviar extractions the eggs are strained and studied carefully for their firmness, size and color, which then is classified as Imperial or Regular caviar. Caviar is considered a delicacy and is eaten as a garnish or a spread.
